Low Calorie Salmon Spread

  • 1/4 c. low-fat cottage cheese
  • 2 Tbsp. olive oil
  • 1 (7 1/2 oz.) can red salmon, drained (bones removed)
  • 1/4 c. plain yogurt
  • 4 Tbsp. finely chopped onion
  • 1 Tbsp. dried dill weed
  • 4 tsp. finely chopped green bell pepper
  • 2 tsp. white wine
  • Worcestershire sauce to taste
  • 1/4 tsp. Tabasco sauce

Directions

    Place cottage cheese in the bowl of a food processor and process until creamy.

    Transfer to a medium-size bowl and mash in the olive oil, salmon and yogurt.

    Fold in the green pepper and onion.

    Add the dill weed, Worcestershire and Tabasco and stir. Refrigerate until ready to serve.
