- 18 eggs
- 1 bunch fresh asparagus
- 1 chopped onion
- 1 chopped green pepper
- 1 (10 ounce) can tomatoes and green chilies
- 2 cups of grated cheddar cheese
- 1 tablespoon olive oil
- salsa
Directions

1Chop Onion and Pepper.

2Saute in Olive Oil in large frying pan with lid.

3Add Chopped asparagus tips only.

4Cook till almost tender (a few minutes).

5Drain tomatoes with Chiles and add to frying pan.

6Break and drop eggs over mixture trying not to break the yokes.

7Add 2 oz of water if not moist.

8Cover and cook over low heat until the eggs are done.

9Uncover, add cheese, turn off heat, cover and let stand until the cheese is melted, 10-15 minutes.
