- 3/4 c. grated Parmesan
- 2 Tbsp. all-purpose flour
- 4 (4 oz.) sole fillets
- 1 large egg, beaten
- 2 to 3 Tbsp. butter
- 1 to 2 Tbsp. oil
- 1/2 c. finely chopped salted macadamia nuts, toasted
- garnishes: fresh parsley sprigs, lemon wedges
Directions

1Combine cheese and flour; stir well.

2Dip fillets in beaten egg; dredge in cheese mixture.

3Combine butter and oil in a baking dish.

4Place fillets in dish, turning to coat.

5Sprinkle fillets with macadamia nuts.

6Bake uncovered at 425° for 10 minutes or until fish flakes easily when tested with a fork.

7Remove fillets to a serving platter.

8Garnish.
