  • 3/4 c. grated Parmesan
  • 2 Tbsp. all-purpose flour
  • 4 (4 oz.) sole fillets
  • 1 large egg, beaten
  • 2 to 3 Tbsp. butter
  • 1 to 2 Tbsp. oil
  • 1/2 c. finely chopped salted macadamia nuts, toasted
  • garnishes: fresh parsley sprigs, lemon wedges

Directions

    Combine cheese and flour; stir well.

    Dip fillets in beaten egg; dredge in cheese mixture.

    Combine butter and oil in a baking dish.

    Place fillets in dish, turning to coat.

    Sprinkle fillets with macadamia nuts.

    Bake uncovered at 425° for 10 minutes or until fish flakes easily when tested with a fork.

    Remove fillets to a serving platter.
