- 1 small onion, finely chopped
- 4 tablespoons madeira wine
- 3 cups beef stock
- 12 ounce butter
- salt and black pepper
Directions

1Saute the onions in a hot pan until they are well browned then add the Madeira.

2Reduce the liquid by half, add the stock and then reduce by half again.

3Season with salt and pepper.

4Pass through a sieve, then add the butter.

5Serve warm.
