Make-Ahead Muffin Mix

Ingredients

  • 2 c. oatmeal
  • 2 c. boiling water
  • 8 egg whites
  • 3/4 c. canola oil
  • 1 tsp. salt
  • 3 c. whole wheat flour
  • 4 c. unprocessed wheat bran
  • 1 c. sugar
  • 1 qt. buttermilk
  • 5 tsp. baking soda

Directions

    In a large mixing bowl, combine oatmeal and boiling water; mix well.

    In a separate bowl, combine egg whites (may use 4 whole eggs), oil, sugar, salt and buttermilk.

    Mix well.

    Combine flour and soda; mix well. Add wheat bran and mix well.

    Add liquid ingredients to the oatmeal mixture and mix well. Add remaining ingredients and mix until just moistened. Do not overmix!

    Store, tightly covered, in the refrigerator.

    It will keep for up to a month.
