Mango Gelato

  • 1/2 cup sugar
  • 1/2 cup water
  • 2 pounds mango ripe fresh
  • 3 tablespoons lime juice freshly squeezed
  • 2/3 cup coconut milk

Directions

    In a medium saucepan, combine the sugar & water, bring to a boil while stirring and cook until the liquid is clear and the sugar is dissolved.

    Place the pan in an ice bath and stirring constantly, until it cools to room temperature.

    Peel, seed & dice the mangoes and puree them in a food processor with the juice & syrup. Transfer to a container and stir in the coconut milk. Cover& refrigerate until cold- 2-3 hours

    Freeze in an ice cream maker according to the manufacturers instructions. Transfer to a a container and freeze until firm.
