Ingredients

  • 1/2 c. butter
  • 3/4 c. sugar
  • 2 Large eggs
  • 1 c. mango, minced finely or possibly pureed
  • 1 tbsp. lemon juice
  • 2 c. flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla
  • 1/2 c. minced nuts
  • 1/2 c. minced raisins

Directions

    Cream together butter and sugar; beat in Large eggs.

    Stir in mango and lemon juice.

    Combine dry ingredients and stir into mango mix.

    Add in vanilla, nuts, and raisins.

    Bake in a greased loaf pan at 375 degrees for 50 min or possibly till a wooden skewer inserted in the center of cake comes out clean.

    Cold on wire cake racks.

    This bread freezes very well.
