  • 1 c. plus 1 Tbsp. unsalted butter, softened and divided
  • 1 c. sugar
  • 2 tsp. vanilla
  • 1 c. maple syrup
  • 2 eggs
  • 1 1/3 c. flour
  • 1 tsp. baking powder
  • 1 c. flaked coconut
  • 2 c. rolled oats (non-instant)
  • 1 c. walnuts, finely chopped

Directions

    Preheat oven to 350°.

    Grease a 9 x 13-inch baking pan with 1 tablespoon butter.

    In a large mixing bowl, beat together butter and sugar.

    Add vanilla, maple syrup and eggs.

    In a medium bowl, sift together flour and baking powder; add to maple mixture. Blend in oats, coconut and walnuts.

    Spread the batter evenly in pan and bake for about 30 minutes, until lightly browned and wooden pick comes out clean.

    Cool on a rack, then cut into bars. Makes 2 dozen bars.
