- 1/2 c. sugar
- 1/2 c. oil
- 1/2 c. vinegar
- 1 medium onion, sliced or chopped
- 1 bell pepper, sliced or chopped
- salt to taste
Directions

1Cut carrots into 1/2 dollar size pieces.

2Cook for 2 or 3 minutes, then drain.

3Mix all other ingredients.

4Pour over cooked carrots and let stand overnight.

5Will keep a long time in refrigerator.
