Ingredients

  • 1 1/4 pounds gruyere cheese rind removed
  • 1/2 pound red onions halved and cut into fine slices
  • 1 bunch chives snipped into tiny rings
  • 5 tablespoons white wine vinegar
  • 1 cup olive oil
  • 1 1/4 pounds mini mozzarella balls drained
  • 1/4 pound pine nuts toasted
  • 1/4 pound green olives drained
  • 1/3 pound kalamata olives drained
  • 1/2 head garlic fresh young, peeled and coarsely chopped
  • 1 sprig rosemary needles fresh, removed and finely chopped, leave a few needles whole, for garnish

Directions

    For the marinated Gruyere, mix the Gruyere with the onions, chives, vinegar and 1/2 cup oil. Season with pepper. Transfer to a sealable jar and refrigerate.

    For the marinated Mozzarella, mix the Mozzarella, pine nuts, olives, garlic, 1/2 cup oil and the chopped rosemary. Season then transfer to a jar and refrigerate.

    Marinate both cheeses for at least 2 hours. To serve, adjust the seasoning and garnish with the reserved rosemary needles.
