  • 4 c. assorted fresh vegetables (carrots, cherry tomatoes, cauliflower, mushrooms, broccoli, onion, cucumber, zucchini, etc.)
  • 1/4 c. lemon juice
  • 1/4 c. vegetable oil
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. oregano or thyme leaves
  • 1/8 tsp. pepper

    Place vegetables in shallow baking dish.

    In small bowl, combine remaining ingredients; mix well.

    Pour over vegetables. Cover; refrigerate 6 hours or overnight, stirring occasionally.
