Ingredients

  • 4 tablespoons oil
  • 2 onions Chopped
  • 3 garlic cloves Crushed
  • 3 teaspoons ginger Grated
  • 1 tablespoon curry powder
  • 1 9/16 pounds minced beef
  • 2 inches cinnamon stick
  • 1 bay leaf
  • 2 11/16 cups chopped tomatoes Tinned
  • salt
  • ground black pepper

Directions

    Heat the oil in a heavy based saucepan. Fry the onions, garlic and ginger for 3-4 minutes over a medium heat then stir in the curry powder. Fry a further minute.

    Add the minced beef, increase the heat and cook until browned, stirring occasionnaly. Mix in the cinnamon stick, bay leaf and tomatoes. Stir well and simmer for 45-55 minutes. Season and remove bay leaf and cinnamon. Serve with rice and coriander.
