- 4 tablespoons oil
- 2 onions Chopped
- 3 garlic cloves Crushed
- 3 teaspoons ginger Grated
- 1 tablespoon curry powder
- 1 9/16 pounds minced beef
- 2 inches cinnamon stick
- 1 bay leaf
- 2 11/16 cups chopped tomatoes Tinned
- salt
- ground black pepper
Directions

1Heat the oil in a heavy based saucepan. Fry the onions, garlic and ginger for 3-4 minutes over a medium heat then stir in the curry powder. Fry a further minute.

2Add the minced beef, increase the heat and cook until browned, stirring occasionnaly. Mix in the cinnamon stick, bay leaf and tomatoes. Stir well and simmer for 45-55 minutes. Season and remove bay leaf and cinnamon. Serve with rice and coriander.
