Mediterranean Chicken With Cinnamon

  • 4 large chicken breasts, pounded flat(about 2 pounds)
  • 1/2 cup Italian dressing
  • 1 large lemon, juiced
  • 1 teaspoon dried oregano
  • 1/2 tablespoon minced garlic
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt(optional)
  • 1/4 teaspoon pepper
  • 3 tablespoons olive oil(optional)

    1. Butterfly chicken breasts or pound in a large zip-lock bag(one at a time)until thin.

    2. Place all breasts in a zip-lock bag and pour in the Italian dressing

    3. Marinate at least 2 hours or overnight

    4. Rinse chicken breast to remove the excess dressing.

    5. In a small bowl combine the lemon juice, oregano, basil, cinnamon, garlic and salt and pepper. Mix well.

    6. Pour mixture over the chicken breasts and coat them thoroughly. Let sit for 5 minutes.

    7. If you like you may then brush the breasts with some olive oil to help keep them from sticking to the grill.

    8. Grill chicken until it is cooked well about 8 minutes per side.
