- 3 pita breads, each about 6-inches in diameter
- 1 large clove garlic
- 3/4 lb. tomatoes, seeded and diced (about 1 3/4 c.)
- 6 oz. Mozzarella cheese, shredded (about 1 1/2 c.)
- 2 Tbsp. chopped fresh parsley
- 1 Tbsp. balsamic vinegar
- 1 1/2 tsp. chopped fresh basil or 1/2 tsp. dried basil, crumbled
- 1/4 tsp. salt
- pinch crushed red pepper flakes
Directions

1Heat oven to 400°.

2Cut each pita horizontally in half.

3Cut each half into quarters.

4Arrange pieces cut-side up on a cookie sheet.

5Bake until golden brown, 5 to 6 minutes.

6Remove, but keep oven on.

7Gently rub tops of pita quarters with garlic cloves taking care not to break pitas.

8Arrange them on an ovenproof plate.

9In medium bowl, combine tomatoes, Mozzarella, parsley, vinegar, basil, salt and red pepper flakes.

10Spoon mixture onto pita pieces.

11Bake until cheese melts, about 5 minutes.
