Mediterranean Nachos

  • 3 pita breads, each about 6-inches in diameter
  • 1 large clove garlic
  • 3/4 lb. tomatoes, seeded and diced (about 1 3/4 c.)
  • 6 oz. Mozzarella cheese, shredded (about 1 1/2 c.)
  • 2 Tbsp. chopped fresh parsley
  • 1 Tbsp. balsamic vinegar
  • 1 1/2 tsp. chopped fresh basil or 1/2 tsp. dried basil, crumbled
  • 1/4 tsp. salt
  • pinch crushed red pepper flakes

Directions

    Heat oven to 400°.

    Cut each pita horizontally in half.

    Cut each half into quarters.

    Arrange pieces cut-side up on a cookie sheet.

    Bake until golden brown, 5 to 6 minutes.

    Remove, but keep oven on.

    Gently rub tops of pita quarters with garlic cloves taking care not to break pitas.

    Arrange them on an ovenproof plate.

    In medium bowl, combine tomatoes, Mozzarella, parsley, vinegar, basil, salt and red pepper flakes.

    Spoon mixture onto pita pieces.

    Bake until cheese melts, about 5 minutes.
