- 12 oz new potatoes, scrubbed and halved
- 3.5 oz green beans, trimmed
- 3 None medium eggs, hard boiled and shelled
- 3.5 oz black olives, drained
- 3.5 oz salami, cut into strips
- 1 bunch spring onions, trimmed and chopped
- None None Chives, finely chopped, to taste
- None None Dressing
- 4 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- None None Flat leaf parsley, to garnish
Directions

1Cook potatoes in boiling salted water for 20 minutes. Add beans for final 3-4 minutes; drain.

2Cut eggs into wedges. Toss with all the salad ingredients. Mix together dressing ingredients and season to taste. Drizzle salad with dressing, garnish with parsley and serve.
