Mediterranean Salad

Ingredients

  • 12 oz new potatoes, scrubbed and halved
  • 3.5 oz green beans, trimmed
  • 3 None medium eggs, hard boiled and shelled
  • 3.5 oz black olives, drained
  • 3.5 oz salami, cut into strips
  • 1 bunch spring onions, trimmed and chopped
  • None None Chives, finely chopped, to taste
  • None None Dressing
  • 4 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • None None Flat leaf parsley, to garnish

Directions

    Cook potatoes in boiling salted water for 20 minutes. Add beans for final 3-4 minutes; drain.

    Cut eggs into wedges. Toss with all the salad ingredients. Mix together dressing ingredients and season to taste. Drizzle salad with dressing, garnish with parsley and serve.
