  • 4 pieces Boneless, Skinless Chicken Breasts
  • 1/2 cups Crumbled Feta Cheese
  • 1/2 cups Shredded Mozzarella Cheese
  • 1/2 cups Sun-dried Tomatoes In Olive Oil
  • 1/4 cups Kalamata Olives, Finely Chopped
  • 1 Tablespoon Capers
  • 1 can Diced Tomatoes (14.5 Oz Can)
  • 1/4 cups Balsamic Vinegar
  • 1 dash Salt
  • 1 dash Pepper

Directions

    Preheat oven to 350 degrees.

    In a medium bowl, combine feta, mozzarella, sundried tomatoes, olives and capers.

    Carefully cut a horizontal slit into each chicken breast to form a pocket.

    Stuff each breast with equal amounts of the sundried tomato and olive mixture.

    Place stuffed chicken into a lightly greased baking dish; season with salt and pepper.

    Stir together diced tomatoes and balsamic vinegar and pour over the chicken.

    Bake, uncovered, for 35-40 minutes or until chicken is cooked through.
