Mediterranean Vegetable Wrap

  • 1-1/2 qt. cucumbers, peeled, seeded and chopped
  • 1 qt. red peppers, chopped
  • 1-1/2 cups green onions, sliced
  • 3/4 cup sliced black olives
  • 3 cups KRAFT Signature Sun Dried Tomato Oregano Dressing
  • 48 each flour tortillas (10 inch)
  • 96 each romaine lettuce leaves
  • 1-1/2 gal. hummus

Directions

    Mix cucumbers, peppers, onions, olives and dressing until well blended; cover.

    Refrigerate until ready to use.

    For each serving: Place 2 lettuce leaves on tortilla; top with 1/2 cup of the hummus and 2 Tbsp.

    of the cucumber mixture.

    Fold in side of tortilla, then roll up tightly from bottom.

    Wrap in paper wrap, then cut diagonally in half to serve.
