- 900 g cooking apples
- 50 g sugar
- 1 tablespoon apricot jam
- 1 tablespoon lemon juice
- 3 tablespoons orange juice
- 200 g soy margarine
- 200 g caster sugar
- 225 g ground almonds
- 4 eggs
- 1 lemon, zest of, grated
Directions

1Peel, core and dice the apples. Put them in a microwave proof bowl with the 50g sugar, jam, lemon juice and orange juice. Cook on full power for 7 minutes.

2Put the cooked apple into the bottom of an oven dish.

3Beat the margarine, caster sugar, ground almonds, eggs and lemon zest together until smooth. Spread over the apple.

4Bake for 40 minutes on 350°F/180°C until golden brown,.
