Ingredients
- 1/2 c. chopped onion
- 2 cloves of garlic
- 1 lb. lean ground beef
- 2 Tbsp. olive or vegetable oil
- 2 cans (14 1/2 oz. each) beef broth
- 1 3/4 c. water (may need to add more)
- 1 can (17 oz.) can corn
- 1 can (16 oz.) tomatoes, crushed & pureed
- 3/4 c. sliced zucchini
- 1/2 c. sliced celery
- 1/2 tsp. oregano leaves
- 1 box Farmhouse Mexican Rice
- 1 c. cheddar cheese
Directions

1Saute onion and garlic in oil till tender.

2Add ground beef and cook until browned.

3Drain.

4Add broth, water, corn, tomatoes, zucchini, celery and oregano.

5Bring to a boil.

6Add rice and flavor packet.

7Reduce heat and simmer for 20 minutes.

8Serve and sprinkle with cheese.
