Mexican Corn Bread

  • 1 1/2 c. corn meal
  • 1 c. buttermilk
  • 1/2 tsp. salt
  • 1 Tbsp. soda
  • 1 onion, chopped
  • 1/2 lb. Cheddar cheese, grated
  • 1 c. cream-style corn
  • 4 Tbsp. flour
  • 2 eggs
  • 1/2 c. cooking oil
  • 4 jalapeno peppers, chopped

Directions

    Mix corn meal, buttermilk, salt, flour, soda, eggs, corn and cooking oil together.

    Pour half of the mixture into a greased pan.

    Pour cheese, onion and peppers in the middle.

    Pour other ingredients over. Make like ordinary corn bread (not too thick). Bake 40 to 45 minutes in a 375° to 400° oven.
