Mexican Corn Bread

  • 1 lb. ground beef
  • 1 medium onion
  • 1 c. cornmeal
  • 1/2 tsp. baking soda
  • 2 eggs
  • 1 c. milk
  • 3/4 tsp. salt
  • 1/3 c. vegetable oil
  • 1 can creamed corn
  • 1 can Ro-Tel, diced
  • 8 oz. grated cheese

Directions

    Brown beef and onion; drain.

    Mix meal, soda, eggs, milk, salt, oil and corn.

    Mix well.

    Pour half mixture in hot, greased iron skillet; then layer beef, Ro-Tel and then cheese.

    Pour remaining mixture over cheese.

    Bake at 350° for 45 minutes.
