- 2 Tbsp. oil
- 2 c. chopped whole kernel corn
- 3 eggs
- 1 c. sour cream
- 1 c. yellow corn meal
- 1 c. chopped green chiles
- 1 tsp. baking soda
- 1 tsp. salt
- 2 c. grated Monterey Jack cheese
Directions

1Preheat oven to 400°.

2Put 2 tablespoons of oil in a 10-inch cast-iron skillet.

3Set skillet in oven to heat while mixing other ingredients.

4Corn may be chopped briefly in food processor. Combine ingredients and mix thoroughly.

5Pour into well heated frying pan.

6Bake for 45 minutes or until firm.
