Mexican Corn Bread

  • 2 eggs
  • 1/4 c. cooking oil
  • 1 can cream-style corn
  • 3/4 c. milk
  • 1 c. corn meal
  • 1/2 tsp. salt
  • 1 can small green chilies, chopped
  • 1 1/2 c. shredded Longhorn or Cheddar cheese

Directions

    Beat eggs and oil.

    Add corn, milk and dry ingredients, beating lightly after each addition.

    Add chili peppers and half of cheese.

    Pour into a greased dish and cover with remaining cheese.

    Bake at 350° for 45 to 50 minutes.

    Good with any kind of cooked dried bean.
