- 2 eggs
- 1/4 c. cooking oil
- 1 can cream-style corn
- 3/4 c. milk
- 1 c. corn meal
- 1/2 tsp. salt
- 1 can small green chilies, chopped
- 1 1/2 c. shredded Longhorn or Cheddar cheese
Directions

1Beat eggs and oil.

2Add corn, milk and dry ingredients, beating lightly after each addition.

3Add chili peppers and half of cheese.

4Pour into a greased dish and cover with remaining cheese.

5Bake at 350° for 45 to 50 minutes.

6Good with any kind of cooked dried bean.
