  • 3 c. cornmeal
  • 1 c. all-purpose flour
  • 3 c. buttermilk
  • 3 eggs
  • 1 c. sugar
  • 1 tsp. soda
  • 2 tsp. salt
  • 6 tsp. baking powder
  • 2 cans Mexican corn or 1 large can whole kernel corn
  • 2 large onions, chopped
  • 2 jalapeno peppers, chopped
  • 2 (10 oz.) pkg. sharp Cheddar cheese, cubed
  • 1/2 c. oil (hot)

    Mix first 8 ingredients in large bowl.

    Add remaining ingredients.

    Pour in hot pan.

    Bake at 350° for 1 hour in a 9 x 13-inch pan.
