Mexican Cornbread

  • 3 c. self-rising corn meal mix
  • 3 Tbsp. oil
  • 2 Tbsp. sugar
  • 2 eggs, beaten
  • 1 c. flour
  • 2 to 2 1/4 c. milk
  • 1 lb. ground beef
  • 1 bell pepper, chopped
  • 3 c. Cheddar or Colby cheese, shredded

    In a mixing bowl, mix corn meal mix, oil, sugar, eggs, flour and milk.

    Keep aside.

    In a skillet brown ground beef and bell pepper.

    Drain.

    Pour half of the cornbread mixture in a greased and floured 9-inch square pan.

    Sprinkle all the ground beef and peppers on top; then sprinkle the cheese on top of the ground beef.

    Pour the rest of the cornbread mixture on top.

    Bake at 425° for about 30 to 45 minutes.
