- 3 eggs, slightly beaten
- 1 c. milk
- 2 c. self-rising corn meal
- 1 c. cream-style corn
- 1 1/2 c. (6 oz.) shredded Cheddar cheese
- 1 medium onion, chopped
- 1 green bell pepper or 3 jalapeno peppers (optional)
- 1/2 c. vegetable oil
Directions

1Mix corn meal, milk, eggs, corn, cheese, oil, chopped onion and chopped peppers in a large mixing bowl.

2Mix well.

3Put a small amount of oil in a large skillet and then pour mixture into the skillet and cook in oven on 375° for 25 to 30 minutes.
