  • 3 eggs, slightly beaten
  • 1 c. milk
  • 2 c. self-rising corn meal
  • 1 c. cream-style corn
  • 1 1/2 c. (6 oz.) shredded Cheddar cheese
  • 1 medium onion, chopped
  • 1 green bell pepper or 3 jalapeno peppers (optional)
  • 1/2 c. vegetable oil

Directions

    Mix corn meal, milk, eggs, corn, cheese, oil, chopped onion and chopped peppers in a large mixing bowl.

    Mix well.

    Put a small amount of oil in a large skillet and then pour mixture into the skillet and cook in oven on 375° for 25 to 30 minutes.
