  • 2 1/2 c. cornmeal
  • 2 1/2 c. buttermilk
  • 1/2 c. vegetable oil
  • 1/2 can creamed corn
  • 1/2 c. diced bell pepper
  • 1/4 c. diced jalapenos
  • 1/2 Tbsp. hot sauce (Texas Pete)
  • 2 eggs
  • 1 c. grated cheese
  • 2 Tbsp. pimentos
  • 3 Tbsp. flour (self-rising)
  • 1 tsp. baking powder
  • 1 c. cracklings (optional)

    Blend all together on medium-high for 2 minutes or until well blended.
