- 2 1/2 c. buttermilk
- 1/2 c. vegetable oil
- 1/2 can creamed corn
- 1/2 c. diced bell pepper
- 1/4 c. diced jalapenos
- 1/2 Tbsp. hot sauce (Texas Pete)
- 2 eggs
- 1 c. grated cheese
- 2 Tbsp. pimentos
- 3 Tbsp. flour (self-rising)
- 1 tsp. baking powder
- 1 c. cracklings (optional)
Directions

1Blend all together on medium-high for 2 minutes or until well blended.

3Bake at 375° for 25 to 30 minutes until brown.
