Mexican Fried Rice

  • 1 1/2 c. rice
  • 3 Tbsp. bacon grease
  • 1 medium onion, chopped
  • 1 tsp. cumin
  • 2 Tbsp. chili powder
  • salt to taste
  • 1 can chopped tomatoes
  • 1 can water

Directions

    Put bacon grease and rice in frying pan over low heat.

    Stir occasionally until lightly brown.

    Add onions, cumin, salt, chili powder, tomatoes and water.

    Cover with a tight lid and cook over low heat until rice is done.

    Add more water if necessary.
