Ingredients
- 1/2 c. cooking oil
- 1 c. rice
- 4 cloves garlic, crushed
- 12 black peppercorns, crushed
- 1/4 tsp. cumin or comino
- 1 onion, chopped
- 2 tomatoes, peeled and chopped or 1 c. canned tomatoes
- 1/2 green pepper, coarsely chopped
- 2 c. water
Directions

1Heat oil until hot in an iron skillet.

2Add rice and stir constantly until it is nice and brown.

3Remove from heat and drain off all the oil.

4Add spices and stir briefly.

5Add onion, tomatoes, pepper and water.

6Stir well and bring to a boil.

7Cover pot, lower heat and allow to simmer.

8Do not stir.

9Cook until it has absorbed all the liquid, being careful not to allow it to burn.

10Serves 4.
