Michigan Chilies Rellenos

  • 1/2 c. (4 oz.) plain nonfat yogurt
  • 1 large egg
  • 3 Tbsp. flour
  • 3 oz. each Cheddar and Monterey Jack cheese, shredded
  • 1 (4 oz.) can green chili peppers, rinsed, drained and open down middle
  • 1/4 c. tomato sauce

    Preheat oven to 350°.

    Spray casserole with Pam.

    Combine yogurt, egg and flour until smooth; set aside.

    Combine cheeses in other bowl.

    In casserole sprinkle 2 ounces of cheese in bottom of casserole; top with chili peppers, then cheese mixture.

    Pour yogurt mixture on top, then tomato sauce, then rest of cheese. Bake until puffed and edges are slightly browned, about 40 minutes. Per serving:
