  • 2/3 c. vegetable oil
  • 2/3 c. flour
  • 2/3 c. chopped onions
  • 2/3 c. chopped green peppers
  • 2/3 c. chopped celery
  • 2/3 c. chopped green onions
  • 2/3 tsp. minced garlic
  • 2/3 c. water

Directions

    Put several cups of flour in a large, heavy pot and brown at 400° for about an hour, stirring every 15 minutes or so.

    You may do this on top of the stove, stirring constantly for 15 minutes. Store in a jar in the cabinet.

    Mix equal parts of flour and water or oil, stirring until smooth.

    Add to gumbos, soups, stews or gravies.
