Microwave Peanut Brittle

- 1 c. sugar
- 1/2 c. white Karo syrup
- 1 c. roasted peanuts (salted)
- 1 Tbsp. butter or margarine
- 1 tsp. vanilla
- 1 tsp. baking soda
Directions

1In a 1 1/2-quart casserole dish, stir sugar and syrup together.

2Cook 4 minutes on High.

3Stir in peanuts.

4Cook on High for 3 minutes.

5Add butter and vanilla, blending well.

6Cook on High for 1 1/2 minutes.

7Peanuts will be slightly brown and syrup very hot.

8Add baking soda; gently stir until light and fluffy. Pour mixture onto lightly greased cookie sheet.

9Let cool 1/2 to 1 hour, then break into pieces and store in airtight container.
