- 1/4 c. chopped onion
- 1/4 c. chopped celery
- 1/4 c. chopped green pepper
- 2 Tbsp. margarine or butter
- 1 c. hot water
- 1 (4 oz.) can sliced mushrooms, drained
- 1/3 c. uncooked long grain rice
- 1 Tbsp. instant chicken bouillon
Directions

1Combine onion, celery, green pepper and margarine in 1-quart casserole.

2Microwave on High (100%) until vegetables are tender-crisp, 3 to 5 minutes.

3Stir in remaining ingredients; cover.

4Microwave on High for 5 minutes.

5Reduce power to Medium; microwave until liquid is absorbed, 10 to 12 minutes.

6Let stand, covered, 5 minutes.

7Fluff with fork before serving.
