Miko's Lotus Root

  • 150 g fresh lotus root
  • 1 tablespoon olive oil
  • 2 teaspoons reduced sodium soy sauce
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil

Directions

    Cut lotus root into thin slices.

    Saute in frying pan with olive oil for a few minutes.

    Be careful not to saute too long, as lotus root tastes best when still a little crunchy.

    Mix in sugar and soy sauce and continue to cook until well incorporated.

    Remove from heat and add sesame oil.
