Million Dollar Chili

Ingredients
- 1/2 c. chopped beef suet
- 4 medium onions, chopped
- 2 lb. ground chuck
- 2 cans (1 lb. 12 oz. each) tomatoes
- 3 Tbsp. chili powder
- 3 Tbsp. ground cumin
- 1 Tbsp. paprika
- 2 cloves garlic, minced
- 1/2 large green pepper, chopped
- salt and pepper to taste
- 3 cans (15 oz. each) red beans in chili gravy
- 1 Tbsp. oregano
- 1/3 c. Burgundy wine
Directions

1In a large kettle, melt beef suet.

2Add garlic and onions. Cook until golden.

3Add green pepper and meat, breaking up until crumbly.

4Spoon off liquid.

5Mix in salt, pepper and tomatoes. Add beans, chili powder, cumin, oregano, paprika and wine, mixing after each addition.

6Simmer 1 1/2 hours.

7Cool; refrigerate 2 days.

8When ready to use, skim fat off top and reheat slowly.
