Ingredients
- 4 large russet potatoes, boiled, peeled and cubed
- 9 pieces bacon, fried crisp and crumbled
- 4 Tbsp. oleo
- 1/2 bell pepper, chopped
- minced garlic to taste
- salt and pepper to taste
- 8 eggs, lightly beaten
- 1 c. grated Cheddar cheese
Directions

1Preheat oven to 350°.

2Melt butter in a skillet; add potato cubes and bell pepper; brown slightly.

3Add garlic to potatoes. Add salt and pepper to taste.

4Pour eggs over potatoes and cook until eggs form soft curds, stirring constantly.

5Mix in crumbled bacon.

6Sprinkle grated cheese over the top.

7Place skillet in oven or under broiler until cheese is melted.

8Serves 6.
