Ingredients

  • 3 gal. beef stock
  • 1 c. presoaked lima beans
  • 1 3/4 c. presoaked navy beans
  • 1 c. presoaked split peas
  • 6 oz. spaghetti
  • 7 oz. rice
  • 1/2 c. grated onion
  • 3 lb. potatoes, diced small
  • 4 cloves garlic
  • 1 Tbsp. thyme
  • 1 1/2 c. celery, diced small
  • 5 oz. carrots, cubed
  • 12 oz. cabbage, chopped
  • 2 qt. canned tomatoes
  • 1/2 c. salad oil
  • 2 c. flour
  • salt and pepper

Directions

    Boil first 4 ingredients 1 hour.

    Add spaghetti, boil 1 hour more.
  3. 3
    Add next 9 ingredients and boil 1 hour longer.

    Mix oil and flour with a little soup and then add to the soup to thicken. Yields 57 (1-cup) servings.
