  • 1 (8 oz.) cream cheese
  • 1/4 c. sugar
  • 1 1/2 tsp. lemon juice
  • 1/2 tsp. grated lemon peel
  • 1/4 tsp. vanilla
  • 1 egg
  • strawberry preserves

Directions

    Combine cream cheese, sugar, juice, peel and vanilla, mixing at medium speed.

    Blend in egg.

    Pour over vanilla wafers in cupcake papers in cupcake pan.

    Bake at 325° for 25 minutes.

    Cool in pans, then chill.

    Then top with strawberry preserves.
