  • 4 ounces digestive biscuits

    Crush the digestive biscuits to your preference and slowly add in the melted butter. Add more melted butter if required this will help the base hold together better and give it a better texture and of course richer taste.

    Line a 10 inch cake tin with cling film as this will help get the cheesecake out easier when you need to serve, cover the base of the tin with the biscuit mixture, make sure you have a little raised bit around the edge this looks far more attractive when put on a plate to serve.

    Mix together the Cream Cheese and the icing sugar in a bowl, I used a wooden spoon as it seems to mix better, but make sure it mixes well.

    Whip the whipping cream and then add this to the Cream Cheese mixture.

    Grate one whole bar of the Mint Aero and add to the Cream Cheese mixture. Crush one whole bar (place in a plastic or paper bag and hit with a rolling pin or bottle) then place the crushed in the fridge or freezer to cool.

    Spread the Cheesecake mixture on top of the cooled biscuit base

    Add the crushed Aero to the top of the Cheesecake and leave to set overnight in the fridge And hope you enjoy!!!!!!!!!!
