Minty Garlic Potatoes

- 8 red skinned potatoes
- 1/4 c. olive oil
- 4 cloves garlic, finely chopped
- 2 Tbsp. fresh mint, chopped
- coarse (kosher) salt to taste
- black pepper to taste
Directions

1Preheat oven to 350°.

2Prick potatoes with a fork and bake on a cookie sheet for 1 1/2 hours.

3Remove potatoes from oven, cut in quarters and place in bowl.

4While hot, toss with oil, salt, pepper and garlic.

5Gently toss in chopped mint.

6Serve warm or at room temperature.
