- 0.5 (24 ounce) bag frozen mashed potatoes, thawed and coarsely mashed
- 0.5 (24 ounce) bagfrozen mashed sweet potatoes, thawed and coarsely mashed
- 12 teaspoon salt
- 12 teaspoon dried chipotle powder
- 14 teaspoon fresh ground black pepper
- 1 egg, lightly beaten
- 14 cup flour
- 2 tablespoons vegetable oil
Directions

1Preheat oven to 200F

2Pour flour into a shallow dish and set aside.

3Heat vegetable oil over medium high heat in a large skillet.

4In a large mixing bowl, combine potatoes, salt, chipotle seasoning, pepper and egg.

5Form the mixture into 8 equal size cakes.

6Working in batches, dredge potato cakes in flour, add to the skillet and saute for 2 3 minutes per side or until golden brown.

7Transfer to the oven to keep warm and repeat for remaining potato cakes.
