Ingredients

  • 0.5 (24 ounce) bag frozen mashed potatoes, thawed and coarsely mashed
  • 0.5 (24 ounce) bagfrozen mashed sweet potatoes, thawed and coarsely mashed
  • 12 teaspoon salt
  • 12 teaspoon dried chipotle powder
  • 14 teaspoon fresh ground black pepper
  • 1 egg, lightly beaten
  • 14 cup flour
  • 2 tablespoons vegetable oil

Directions

    Preheat oven to 200F

    Pour flour into a shallow dish and set aside.

    Heat vegetable oil over medium high heat in a large skillet.

    In a large mixing bowl, combine potatoes, salt, chipotle seasoning, pepper and egg.

    Form the mixture into 8 equal size cakes.

    Working in batches, dredge potato cakes in flour, add to the skillet and saute for 2 3 minutes per side or until golden brown.

    Transfer to the oven to keep warm and repeat for remaining potato cakes.
