- pastry for double crust 9-inch pie
- 36 Ritz crackers
- 2 c. water
- 2 c. sugar
- 2 tsp. cream of tartar
- 2 Tbsp. lemon juice
- butter or margarine
- cinnamon to taste
Directions

1Roll out pastry for bottom crust and fit into 9-inch pie pan. Break Ritz crackers coarsely into crust.

2Combine water, sugar and cream of tartar in a saucepan and boil gently for 15 minutes.

3Add lemon juice and rind.

4Cool.

5Pour syrup over crackers.

6Dot generously with butter or margarine and sprinkle with cinnamon. Cover with top crust, trimming and fluting edging together.

7Cut slits in top crust.

8Bake in a 425° oven for 30 to 35 minutes until crust is crisp and golden.
