- 1 34 cups apricot nectar
- 14 cup lemon juice
- 1 envelope knox gelatin
- 2 graham crackers, finely crumbled
- 1 (3 ounce) package cream cheese
Directions

1Heat nectar to a boil; pour over gelatin which has been softened in cold water.

2Stir until gelatin is dissolved.

3Add lemon juice.

4Divide mixture in half; put half in square pan.

5Place in refrigerator to set.

6Cream cheese and form into small balls; roll in cracker crumbs.

7when half of the gelatin is set, place cheese balls on it, so there will be one for each serving.

8Pour unset liquid over all.

9place pan in refrigerator again to set.

10Cut into squares and serve on lettuce leaves.
