  • 1 34 cups apricot nectar
  • 14 cup lemon juice
  • 1 envelope knox gelatin
  • 2 graham crackers, finely crumbled
  • 1 (3 ounce) package cream cheese

Directions

    Heat nectar to a boil; pour over gelatin which has been softened in cold water.

    Stir until gelatin is dissolved.

    Add lemon juice.

    Divide mixture in half; put half in square pan.

    Place in refrigerator to set.

    Cream cheese and form into small balls; roll in cracker crumbs.

    when half of the gelatin is set, place cheese balls on it, so there will be one for each serving.

    Pour unset liquid over all.

    place pan in refrigerator again to set.

    Cut into squares and serve on lettuce leaves.
