Monterey Spaghetti

  • 4 oz. spaghetti, broken in 2-inch pieces
  • 1 egg
  • 1 c. sour cream
  • 1/4 c. Parmesan cheese
  • 1/4 tsp. garlic powder
  • 2 c. shredded Monterey Jack cheese
  • 1 pkg. frozen spinach, thawed and drained
  • 1 can French fried onions, divided

Directions

    Cook spaghetti. In medium bowl, beat egg and add sour cream, Parmesan cheese and garlic powder.

    Drain spaghetti.

    Add to egg mixture along with Monterey Jack cheese, spinach and half of onions.

    Pour into greased 2-quart dish.

    Cover and bake at 350° for 30 minutes.

    Top with remaining onions and return to oven for 5 to 10 minutes.

    Makes 6 to 8 servings.
