Ingredients

  • 1 onion, diced
  • 1/2 green pepper, diced
  • 3 tsp. margarine
  • 5 slices Provolone cheese
  • 1/2 c. milk (per 4 eggs)
  • 3 dashes pepper
  • 3 dashes hot pepper (optional)
  • 1/2 lb. chopped mushrooms
  • 1/2 red pepper, diced
  • 2 eggs per person, scrambled
  • 1 diced tomato
  • sweet or Italian sausage to taste
  • 3 dashes oregano

Directions

    Heat large skillet on high.

    Fry onions, peppers then mushrooms in margarine.

    Then add meat.

    Scramble eggs with milk and spices. Add to skillet after veggies and meat are fried to your liking. Let simmer for 2 to 4 minutes.

    Turn on broiler to 350°.

    Add Provolone slices to cover most of egg surface (use whole slices). Then top cheese with diced tomatoes.

    Put skillet under broiler for 2 to 4 minutes until cheese is melted and slightly browned.
