Mountain Apple Cake

- 3 eggs
- 1 1/2 c. oil
- 2 c. sugar
- 3 c. flour
- 1 tsp. salt
- 1 tsp. soda
- 2 tsp. cinnamon
- 2 tsp. vanilla extract
- 3 c. apples, chopped
- 1 1/2 c. pecans and black walnuts, chopped and mixed
Directions

1Preheat oven to 350°.

2Mix eggs, oil and sugar; blend well. Sift flour, salt, soda and cinnamon. Add to egg mixture.

3Add vanilla, apples and nuts.

4Mix well.

5Pour into greased 8-inch tube or Bundt pan. Bake 1 hour.

6While cake is still hot, pour hot topping over it in pan.

7Let cool. When completely cool, remove from pan.

8(Check cake at 50 minutes with toothpick.

9If it comes out dry looking, leave it out and it will finish baking with its own heat.)
