Mozzarella Chicken Breasts

- 4 to 5 chicken breasts, skinned
- 3 Tbsp. oil
- 1 clove garlic, mashed
- salt and pepper to taste
- 1 c. shredded Mozzarella
- 1 large green pepper, sliced
- 1 medium onion, sliced
- 1/2 box fresh mushrooms, sliced
- 1 1/2 to 2 c. dry white wine (Chablis)
Directions

1Season meat, then place in skillet with oil and garlic.

2Cover skillet and cook until meat is done.

3Remove lid and brown chicken.

4Remove chicken and add onions, peppers and mushrooms to skillet and saute.

5Return chicken to skillet and add wine.

6Cover and simmer 10 to 15 minutes.

7Then add cheese and simmer 5 to 10 minutes, until cheese is melted.
