Mozzarella Chicken Breasts

Ingredients

  • 4 to 5 chicken breasts, skinned
  • 3 Tbsp. oil
  • 1 clove garlic, mashed
  • salt and pepper to taste
  • 1 c. shredded Mozzarella
  • 1 large green pepper, sliced
  • 1 medium onion, sliced
  • 1/2 box fresh mushrooms, sliced
  • 1 1/2 to 2 c. dry white wine (Chablis)

Directions

    Season meat, then place in skillet with oil and garlic.

    Cover skillet and cook until meat is done.

    Remove lid and brown chicken.
  4. 4
    Remove chicken and add onions, peppers and mushrooms to skillet and saute.

    Return chicken to skillet and add wine.

    Cover and simmer 10 to 15 minutes.

    Then add cheese and simmer 5 to 10 minutes, until cheese is melted.
