- 1/2 pint blueberries
- 1/4 cup sugar substitute (like Splenda)
- 1 cup oatmeal
- 1 cup low-fat buttermilk
- 1/3 cup applesauce (none of that sugar-added stuff ( just apples and water!)
- 1/2 cup light brown sugar
- 1/4 cup egg substitute
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon maple extract
Directions

1Preheat oven to 400 degrees.

2Line muffin tin with paper cups.

3Mix everything except blueberries in large bowl.

4Carefully stir in blueberries.

5Spoon into muffin tins.

6Bake for about 18 minutes.
