My Squash Casserole

- 3 c. squash
- 3/4 c. chopped onion
- 2 eggs
- 1 can cream of mushroom soup
- 3/4 stick butter
- 2 c. cracker crumbs
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 c. grated cheese
Directions

1Cook squash until tender before measuring.

2Drain water off. Add butter, salt, pepper and cream of mushroom.

3Mix all and add beaten eggs, onion, cheese and cracker crumbs.

4Pour into greased casserole dish and bake (uncovered) at 375° for about 40 minutes. I add more cheese on top.
