- 1 Tbsp. cornstarch
- 1/2 c. water plus 2 Tbsp.
- 3 egg whites
- 6 Tbsp. sugar
- 1 tsp. vanilla
- pinch of salt
Directions

1Mix cornstarch and water and place in microwave.

2Cook until clear, about 3 minutes on Medium-high.

3Cool.

4Beat egg whites (room temperature) until foamy.

5Gradually add a tablespoon of sugar at a time.

6Turn mixer to lower speed and gradually add cornstarch mixture (cooled).

7Turn mixer to high speed and beat well.

8Spread meringue over cooled pie filling.

9Bake at 350° for about 10 to 15 minutes.
